I know, I know...school just started...or for some of you it hasn't even started yet. But isn't that what everybody, teachers, parents and students counting down till? How many days till your winter break?? My daughter is not yet of school age but my husband works for a state college so now we work with school time. This is totally new to me as my father was a firefighter so there were no 'slow' times or times that he had to take vacation We usually took time off during the school week and had amazing family vacations. My father is a bit of a history/science junkie so we always included museums and other 'learning' activities into our family vacations. We thought it was just fun but we really were learning and making great family memories! Isn't that what vacation should be about? Making amazing family memories? There is no better time to unwind, unplug and enjoy some quality family time then during Winter Break. Think about it, no school, no homework, no sporting events, no car pool, no deadlines! To top it off a Winter Break vacation makes an amazing holiday present! Do the children really need another toy that will break and be forgotten in a few weeks or would they rather have a family vacation that they can look back on for the rest of there lives and say...yeah that was the best vacation ever! You only have 18 years of family vacations while there still kids...why not make them count? With the busy lives everyone leads now a days its great to just enjoy that precious family time. #FoodieFriday - A day late but its ok! lol Happy first day of summer!! I have eaten a lot of Creme Brulee in my days. I spent some time in pastry school and we spent weeks perfecting the perfect recipes. Walt Disney world is a Creme Brulee epicenter of the world. Almost every dining location has there own version of this amazingly delicious dessert. The Maple Creme Brulee has to be one of the best! It is a bowl of sweet soft maple goodness!! The burnt sugar topping adds a nice hit to the overly sweet custard. This is not just a fall or winter dessert this is wonderful all year round. And while making it at home will not put you in the center of an amazingly romantic stake house in the middle of the Canada Pavilion, it will make you fee if just for a moment you have transported someplace magical when you close your eyes and taste the hint of maple wrapped up in creamy amazing custard. Maple Crème Brûlée Serves 6 Ingredients: 2 3/4 cups heavy cream 1/2 cup whole milk 1/2 cup plus 2 tablespoons granulated sugar 9 egg yolks 1 1/2 tablespoons maple extract 12 teaspoons sugar for caramelized topping 6 ginger-flavored cookies Preparation: Preheat oven to 325°F. Place six 3/4-cup custard cups in large roasting pan. Combine cream, milk, and sugar in a medium saucepan over medium heat. Slowly bring mixture to a simmer, whisking constantly to dissolve sugar. When sugar is dissolved, stir every few minutes while the mixture is heating to avoid scalding. When small bubbles appear around the edges, remove milk mixture from heat. Whisk egg yolks and maple extract together in a large bowl. Slowly add hot cream mixture to egg yolk mixture, whisking constantly. Divide among custard cups in pan. Pour enough hot water into roasting pan to come halfway up sides of custard cups. Bake custards until center moves only slightly when cups are gently shaken, about 55 minutes. Remove custards from pan. Refrigerate until thoroughly cool. Sprinkle 2 teaspoons sugar evenly over each custard. Working with one custard at a time, hold kitchen torch so that flame is 2 inches above surface. Direct flame so that sugar melts and browns, about 2 minutes. (If you don’t have a kitchen torch, preheat broiler. Sieve 2 teaspoons brown sugar atop each custard. Place dishes on small baking sheet. Broil until sugar just starts to caramelize, rotating sheet for even browning, about 2 minutes, then chill until topping hardens, about 2 hours.) Top with a ginger-flavored cookie. #FoodieFriday You can find these little glowing cubes all over the Disney parks! This however is one of the best signature drinks you can find it in! It may look like a weak drink that goes down way to easy but this drink can pack a nice punch!! By making this delightful cocktail at home you'll save a few bucks by skipping the glow cube.
#FoodieFriday This is the Bread and Butter Pudding at Raglan Road in Downtown Disney! My husband and I went here on our very first trip together in 2010 when it was just the two of us! The meal in itself was amazing. We had some wonderful and delicious foods but the dessert is what I remember the most. It was warm and gooey and simply decadent. We each got our own desserts but ended up fighting over mine, the Bread and Butter Pudding! Raglan Road is always on my top list of places to recommend when wanting to spend an evening at Downtown Disney however if you cant spare the time to head over you can make it yourself and its almost as good. ;-) So throw on some of your favorite Irish pub music and get to work on this life changing dessert. It looks complicated, trust me its not!! Ingredients: 1 loaf Pullman or Texas toast 1 pound Kerry gold butter softened 1 pound Sugar 1 quart Crème anglaise (see below) 1 cup Raisins soaked in Irish mist or water Method of Preparation: 1. Combine the sugar and butter, spread evenly on the bread slices to make sandwiches, stack together and cut of the crust. 2. Cut the "sandwiches" in ½ on an angle (from corner to corner) 3. Butter the inside of 8 oven proof cups or preferred baking dish. One by one dip the "sandwiches" in the anglaise and place in the baking dish, layer the bread and a sprinkling of soaked raisins as you go until done. 4. Bake covered in a Bain Marie at 375 degrees for 35 minutes until it rises a bit. Remove the cover and bake an extra 10 minutes until slightly brown. 5. Carefully remove from the oven and allow to cool slightly serve warm or at room temperature with anglaise and caramel sauce. Sauce Anglaise Ingredients: 6 each Egg yolks 2 cups Sugar 1 each vanilla bean split or a teaspoon vanilla extract 1 quart Heavy cream Method of Preparation: 1. Heat up the cream and the vanilla bean on the stove until it almost starts to boil. Meanwhile combine the egg yolks and sugar in a bowl and whisk well. 2. When the creams reaches the almost boiling point, turn off and remove the pot from the flame. Temper the yolks, by ladling a small amount of cream to the bowl and mixing well. Then add the yolk sugar mixure to the cream, whisk well so that it does not curdle. Place over a low flame for 2 minutes whisking until it starts to thicken. Strain and allow to cool at room temperature. Caramel Sauce Ingredients: ½ pound Butter, chilled ½ pound Brown sugar 1 cup Heavy cream Method of Preparation: Combine the sugar and butter in pot and cook over a medium high flame. Whisk well to combine, when sugar is melted and it starts to boil turn off the stove, remove from the flame and whisk in the cream to combine. Allow to cool to room temperature.
